  • 1 pkt Lean for Life Creamy Vanilla Shake mix (11)
  • 3 egg whites (1.5)
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract (I used 1/2 tsp orange extract instead)
  • Sprinkle cinnamon and nutmeg on top after baking (my addition to the recipe) : )
  • Non-stick cooking spray

Beat egg whites with electric mixer until very stiff, like meringue (this will take a few minutes). Using a rubber spatula, gently fold in the extracts and the vanilla drink powder mix. Do not over mix! Drop by teaspoonfuls on a baking sheet coated with non-stick cooking spray to make 8 cookies. Bake at 350 degrees for 5 minutes. If desired, tops may be browned under broiler for 15-30 seconds. Store remainder in refrigerator. (For my notes on this recipe, see August 7, 2011 post.)

  • 1 c strawberries (11)
  • 1/2 c nonfat cottage cheese (4)
  • 1/2 c sugar free raspberry jello (prepared) (0)
  • 1 tsp vanilla
  • 2 pkts artificial sweetener

Combine all ingredients in a blender and mix until smooth. Pour into a bowl and place in freezer for 15-30 minutes. May also be eaten immediately after mixing.

Very refreshing on a hot summer day. I like it a little tangy without the sweetener.

Total carbs: 21

  • 1 c sliced Strawberries (11) (Fresh is best, but frozen tastes great too)
  • 1/2 c Dannon Lite & Fit Vanilla Yogurt (10)

  • 1/2 c nonfat yogurt (10)
  • 2/3 c mixed berries (11)
  • 1/2 c sugar-free jello (0)

Mix in blender. Store overnight in freezer.

Very refreshing on a hot summer day.
